Ingredients

  • 1

    lb black eyed peas

  • 2

    tablespoons vegetable oil

  • 6

    oz pork shoulder, diced into ½ inch cubes

  • 4

    strips thick sliced bacon cut into ½ inch pieces

  • 1

    medium onion, diced

  • 4

    cloves of garlic minced

  • ½

    teaspoon salt if desired

  • 1

    teaspoon pepper

  • ½

    teaspoon cayenne

  • 1

    teaspoon garlic powder

  • 4

    cups chicken stock

  • 2

    cups water

  • 3

    bay leaves

Directions

Heat oil in a large pot over medium high heat. Add pork and sear until brown on all sides, 4-5 minutes. Add bacon, onion and garlic and cook until lightly browned, about 6-8 minutes. Add salt, pepper, cayenne and garlic powder. Cook until mixture is coated, about 2 minutes. Add the stock, water and bay leaves. Bring mixture to a boil and reduce heat to simmer, covered for 30 minutes. Add black-eyed peas and continue to simmer for 2 hours until peas are very soft. Smash some of the peas against the side for a creamier texture or puree 11/2 the mixture and return to pot.
