Vietnamese Lime Chicken Wings

Ingredients
- 1/3 cup chicken bouillon powder
- 1/2 cup Sriracha chili sauce
- 1/2 cup honey
- 2 TBS cooking oil
- 1/2 cup pureed shallot
- 1/4 cup rice vinegar
- 20 Kaffir lime leaves, finely chopped
- 20 whole jumbo chicken wings
- 1 cup cilantro
- 1 cup roasted peanuts chopped

Preparation
Step 1
1. Combine bouillon, chili sauce, honey, oil, shallots, vinegar and lime leaves and whisk together to form a uniform paste.
2. Reserve some for brushing and place the rest in a zip lock bag. Toss in wings and allow to marinate for 30-60 minutes.
3. Make hot fire on one side of grill. Set the wings on the opposite side of grill. Cover the grill and cook until the wings are just about cooked though, 25-30 minutes. Rotate wings ½ through for even cooking. (essentially baking them)
4. To finish wings. Brush with reserved paste and grill directly over hot coals until charred slightly.
5. Transfer to platter and top with cilantro leaves and peanuts
Note: dip in sweet chili sauce for extra flavor YUMMMM
