Ingredients

  • 1/2 cup artichoke hearts w/o oil (about 4 pieces) drained and chopped
  • 1/4 cup scallions, chopped
  • 1 Tbs fresh lemon juice
  • 1 tea olive oil
  • 1/2 tea Italian seasoning
  • 1/8 tea black pepper
  • 1/8 tea cayenne pepper
  • 6 oz albacore tuna fish, drained and flaked
  • 2 whole wheat english muffins, split
  • 3 Tbs grated parmesan cheese

Step 1

Preheat broiler. Combine first 8 ingredients in a medium sized bowl. Divide the mixture evenly among muffin halves. Sprinkle with cheese. Place on baking sheet. Broil until golden brown (5 min).
