Scalloped potatoes

Ingredients
- 2 lbs potatoes peeled (about 6)
- 4 Tbsp Butter (or Margarine)
- 1/4 c Onion, finely chopped
- 1 Tbsp All-Purpose Flour
- 1 tsp Salt
- 1/4 tsp Pepper
- 2 1/2 c Fat Free Milk
- 2 c shredded natural sharp Cheddar cheese (approx 8 oz)
- 1/4 c bread crumbs
- paprika

Step 1
Heat oven to 350F. Grease 2-quart casserole with cooking spray.
Boil potatoes with a touch of salt. Cut into thin slices.
In 2-quart saucepan, melt 3 Tbps butter or margarine over medium heat. Cook onion in butter about 2 minutes, stirring occasionally, until tender. Stir in flour, salt and pepper. Cook, stirring constantly until smooth and bubbly; remove from heat.
Stir in milk and 1 1/2 cups of cheese. . Heat to boiling, stirring constantly. Boil and stir 1 minute.
Spread potatoes in casserole dish. Pour sauce over potatoes.
Bake uncovered in 375 degrees for 1 hr.
Mix remaining cheese and the bread crumbs; sprinkle over potatoes. Sprinkle with paprika.
Cook uncovered until top is brown and bubbly, 15-20 minutes.
