    lbs potatoes peeled (about 6)

  • 4

    Tbsp Butter (or Margarine)

  • 1/4

    c Onion, finely chopped

  • 1

    Tbsp All-Purpose Flour

  • 1

    tsp Salt

  • 1/4

    tsp Pepper

  • 2 1/2

    c Fat Free Milk

  • 2

    c shredded natural sharp Cheddar cheese (approx 8 oz)

  • 1/4

    c bread crumbs

  • paprika

Directions

Heat oven to 350F. Grease 2-quart casserole with cooking spray. Boil potatoes with a touch of salt. Cut into thin slices. In 2-quart saucepan, melt 3 Tbps butter or margarine over medium heat. Cook onion in butter about 2 minutes, stirring occasionally, until tender. Stir in flour, salt and pepper. Cook, stirring constantly until smooth and bubbly; remove from heat. Stir in milk and 1 1/2 cups of cheese. . Heat to boiling, stirring constantly. Boil and stir 1 minute. Spread potatoes in casserole dish. Pour sauce over potatoes. Bake uncovered in 375 degrees for 1 hr. Mix remaining cheese and the bread crumbs; sprinkle over potatoes. Sprinkle with paprika. Cook uncovered until top is brown and bubbly, 15-20 minutes.
