Country Lemonade Muffins

Ingredients
- GLAZE:
- 2 cups all-purpose flour
- 5 Tbsp sugar
- 1 Tbsp plus 1 tsp poppy seed
- 1 Tbsp baking powder
- 1/2 tsp salt
- 1/2 cup frozen lemonade concentrate, thawed
- 1/2 cup milk
- 1/3 cup melted butter
- 1 egg
- 1/4 cup reserved lemonade concentrate, thawed
- 1/4 cup sugar

Preparation
Step 1
Preheat oven to 400. Grease bottoms of muffin cups or use muffin liners. Combine flour, sugar, poppy seed, baking powder and salt in mixing bowl. Combine lemonade concentrate, milk, butter and egg in glass measuring cup and beat with fork until blended. Pour into flour mixture and stir with fork until dry ingredients are well moistened, do not overmix. Fill muffin cups 3/4 full. Bake until golden brown and a toothpick inserted in center comes out clean (15-20 minutes). Immediately remove from pan. Pierce top of each muffin 3 times with fork. Spoon a teaspon of glaze over top of each muffin. Glaze will crystallize on top as it cools. (To make glaze: Combine concentrate with sugar in small saucepan and heat until sugar dissolves, or heat in glass measuring cup in microwave. Spoon hot glaze over warm muffins).
