Spinach, Apple and Cheddar Cheese Salad

Ingredients
- Dressing:
- 2 (6 oz) packages baby spinach leaves
- 2 large unpeeled Granny Smith apples, halved, cored and thinly sliced
- 8 ounces extra sharp cheedar cheese, cut into 1/2 inch cubes
- 1/2 cup chopped toasted walnuts
- 1/4 cup balsamic vinegar
- 1/4 cup pure maple syrup
- 1/4 cup olive oil

Preparation
Step 1
Combine vinegar, maple syrup and oil in small bowl; wisk to blend. Season dressing to taste with salt and pepper. Can be made 1 day ahead. Cover and chill. Rewhisk before using.
Combine spinach, apples, cheese and walnuts in large bowl. Toss with enough dressing to coat. Season salad to taste with salt and pepper. Transfer salad to serving bowl.
