Avocado soup w/cilantro sauce

Ingredients

  • Avocado Soup:
  • 4 Avocados, peeled, pitted & diced
  • 3 cups chicken broth
  • 2/3 cup milk
  • 2 shallots, finely chopped
  • 6 fresh red cherries, pitted & chopped
  • 1/2 tsp Tabasco sauce
  • Salt & Pepper to taste
  • Cilantro Sauce:
  • 1/4 cup sour cream, plus more for garnish
  • 1/4 cup plain yogurt
  • 2 garlic cloves, finely chopped
  • 1 jalapeno chile, seeded & finely chopped
  • 2 cups cilantro leaves
  • Salt & pepper to taste

Preparation

Step 1

To make soup:
Put avocados, broth, milk, shallots, cherries and Tabasco in food processor or blender & process until evenly mixed. Pour into container, season w/salt & pepper, cover and refrigerate until well chilled.

To make sauce:
Place ¼ cup sour cream, yogurt, garlic, chile and cilantro in a food processor and blend until smooth. Season w/salt & pepper; set aside.

To Serve, pour soup into bowl and add dollop of sour cream and about 2 tblsp of sauce on top of each. Serve cold.
