Butter lettuce watermelon and pecan salad

Ingredients

• Pepper jelly Vinaigrette:
• 3/4 cup chopped toasted pecans
• 5 cups cubed watermelon
• 1 pkg butter lettuce
• 1 cup crumbled gorgonzola cheese
• pepper jelly vinaigrette
• 1/4 cup rice wine vinegar
• 1/4 cup pepper jelly
• 1 Tsbp fresh lime juice
• 1 Tsbp grated onion
• 1 tsp salt
• 1/4 tsp pepper
• 1/4 cup vegetable oil

Preparation

Step 1

Combine watermelon and butter lettuce in a large bowl, add vinaigrette tossing gently to coat. Sprinkle with pecans and cheese

Whisk together all ingredients for vinaigrette until blended
