Sweet-Spicy Cucumbers over tomatoes

Ingredients

  • 2 cups thinly slcied pickling cucumbers
  • 1 cup thinly sliced Vidalia onion
  • 1/4 cup cider vinegar
  • 1/4 cup sugar
  • 1/2 tsp Mustard seeds
  • 1/2 tsp salt
  • 4 garlic cloves, minced
  • 2 whole dried red chiles
  • 16 thin slices tomatoe

Step 1

Arrange half of the cucumbers in a 9 inch pie plate. Top with half the onion. Repeat.

Combine vinegar and other ingredients in a small saucepan. Bring to a boil and cook for 1 minute or until sugar dissoves. Pour hot mixture over the cucumbers. Cover and marinate in fridge for 1 to 4 days. Arrange tomatoes on plate, cover with cucumbers and onions that have been drained.
