Cheesy Chili Lime Potatoes

Ingredients

  • nonstick cooing spray
  • 2 tsp grated lime peel
  • 2 tbsp lime juice
  • 2 tbsp extra virgin olive oil
  • 1/4 tsp garlic powder
  • 1/4 tsp chili powder
  • 1/2 tsp onion powder
  • 4 large yukon gold potatoes
  • salt
  • pepper
  • 1/4 grated cheddar jack cheese

Preparation

Step 1

Preheat oven to 425. Coat a baking sheet with cooking spray.

Combine grated lime peel and juice, olive oil, and garlic, chili and onion powder in a large zippered bag. Mix well.

Clean and cut potatoes into 1/2" thick wedges and add to the bag. Seal and toss to coat thoroughly.

Place potato wedges on the baking sheet and sprinkle with salt and pepper to taste. Bake for 25 minutes.

Remove from the oven and sprinkle with cheese. Return to the oven and continue baking for an additional 10 minutes, or until the potatoes are tender and the cheese is golden brown.
