Ingredients
- 2 limes (Juice (1.5 Tbsp) + Zest)
- 4 egg yolks
- 2 teaspoons Dijon mustard
- 250 mls (1 cup) light olive oil
- 2 garlic cloves, finely chopped

Preparation
Step 1
Mix first 3 (+ Garlic if Using) ingredients (better in blender with double or triple recipe, Very slowly add oil. I mix gets too thick will split so add a trickle warm water to thin. Finish with salt and pepper to taste)
