Cafe Rio Lime Rice


A delicious copy cat of a local Fresh Tex Mex restaurant. Great as a side dish or to add to your sweet pork salad.

  • Also:
  • 4 tsp. granulated chicken bouillon (or crush a cube)
  • 4 tsp. garlic
  • 1/2 bunch cilantro
  • 1 tsp. cumin
  • 1 can green chilies
  • 3/4 tsp. salt
  • 1 Tbl. butter
  • 1/2 chopped onion
  • 6 cups water
  • 3 cups long grain rice


Servings 10


Step 1

Blend all ingredients in blender then put in pan and add 6 cups water and bring to a boil. Add 3 cups rice (long grain, non-instant) and simmer 30 minutes.
