Orange (or Lemon) Snowball Cookies

Lovely drop cookies with icing. Choose Lemon or Orange flavoring to suite your taste!

Ingredients

• 2/3 cup unsalted butter
• 3/4 cup sugar
• 1 egg
• 1/2 cup + 1 tablespoon orange juice or lemonade
• 2 cups flour
• 1/4 teaspoon baking powder
• 1/4 teaspoon baking soda
• 1/2 teaspoon salt
• 2 cups confectioners' sugar, sifted
• 2 egg whites
• orange or lemon sugar (optional)

Preparation

Step 1

Heat oven to 400 degrees. Cream together butter and sugar in a bowl with electric mixer. Add egg and beat until combined. Stir in 1/2 cup of juice.

Sift together flour, baking powder, baking soda, and salt; add to egg mixture and mix until just combined.

Drop rounded teaspoons of dough about 2 inches apart on two parchment-lined baking sheets. Bake 8-10 minutes or until browned on edges.

Combine confectioners' sugar, egg whites, and remaining juice with electric mixer, beat until light, fluffy, and shiny. Spread icing over cooled cookies. Sprinkle with sugar if desired. Let stand to dry, about 4 hours.
