Ingredients
- 1/2 cup finely minced onion
- 2 large tomatoes, sliced
- 2 cups spinach fettucine, cooked al dente
- 1 cup shredded white cheddar cheese
- 2 large ripe avocados, sliced
- 1 cup diced green pepper
- 2 tbsp. finely minced parsley 1/2 cup milk
- 1 cup whipping cream
- 1/4 tsp. ground nutmeg
- 4 eggs
- salt & pepper to taste

Preparation
Step 1
Preheat oven to 300°F.
Butter an 8" pie plate and sprinkle the onions in the bottom. Add the tomatoes, and then the pasta. Sprinkle with cheese and cover with avocado slices and finally add the green peppers and parsley.
In a separate bowl, combine the remaining ingredients and pour over the pie. Bake until the center is firm.
