Tuna Tartare in Cucumber Cups

Ingredients
- 2 seedless cucumbers, cut crosswise into 3/4" thick pieces
- 1 lb sushi quality tuna, diced
- 1 tsp chopped green onion
- 1 tsp finely chopped shallot
- 2 tbsp olive oil
- 1 tbsp soy sauce
- 1/2 tsp hot pepper sauce
- 2 oz caviar, for garnish
- 2 tbsp finely sliced chives, for garnish

Preparation
Step 1
To make cucumber cups, scoop out center of each cucumber piece with a melon baller, making sure not to pierce bottom of cups.
Combine tuna, green onion, shallot, oil, soy sauce, and pepper sauce in a large bowl.
Spoon 1 heaping tsp tuna tartare into each cucumber cup; garnish with caviar and chives.
