Tuna Tartare in Cucumber Cups

Ingredients

  • 2 seedless cucumbers, cut crosswise into 3/4" thick pieces
  • 1 lb sushi quality tuna, diced
  • 1 tsp chopped green onion
  • 1 tsp finely chopped shallot
  • 2 tbsp olive oil
  • 1 tbsp soy sauce
  • 1/2 tsp hot pepper sauce
  • 2 oz caviar, for garnish
  • 2 tbsp finely sliced chives, for garnish

Preparation

Step 1

To make cucumber cups, scoop out center of each cucumber piece with a melon baller, making sure not to pierce bottom of cups.

Combine tuna, green onion, shallot, oil, soy sauce, and pepper sauce in a large bowl.

Spoon 1 heaping tsp tuna tartare into each cucumber cup; garnish with caviar and chives.
