Zucchini and Meatballs

Ingredients

  • 1-1/2 lb. of ground beef
  • 6 slices of bacon, chopped
  • 2 eggs
  • 1/2 c. bread crumbs
  • 1-1/2 t. basil
  • 3/4 t. onion salt
  • 3/4 t. salt
  • 5 medium zucchini, sliced
  • 15 oz. can of tomato sauce (I use the next size for more sauce)

Preparation

Step 1

Fry the bacon and drain most of the grease but not all. Mix ground beef, eggs and next four ingredients and form into meatballs. Brown meatballs in remaining bacon fat. Add zucchini and tomato sauce and cook in bacon pan with a cover until the zucchini is tender.
