To make this salad, you can use arugula with spinach, Bib or Boston lettuce.

Ingredients
- 2 cups arugula
- 2 cups lettuce or baby spinach
- 1 cup diced mango
- 3/4 cup fresh raspberries
- 1/2 cup (1 1/2 ounces) crumbled blue cheese
- 1 tablespoon each of olive oil, water and raspberry vinegar
- 1/8 teaspoon each salt and pepper

Preparation
Step 1
Mix argula, lettuce, mango, raspberries and cheese in a medium bowl. Shake remaining ingredients in a small jar. Pour dressing over salad; toss to coat.
Serve immediately.
