Spicy Chipotle Lentil & Sweet Potato Stew
Spicy and smoky chipotle peppers in adobo sauce meet earthy lentils and tender sweet potatoes in this hearty stew.
Ingredients
- Chipotle Roasted Sweet Potatoes:
- 1 medium sweet potato, peeled and chopped into 1/2-inch cubes
- 2 tsp extra virgin olive oil
- Kosher salt, to taste
- 1/2 tsp chipotle chile powder
- 1/2 tsp ground cumin
- Stew:
- 1 tsp extra virgin olive oil
- 1 large shallot, peeled and diced
- 2 garlic cloves, minced
- 1 chipotle chile in adobo sauce, minced
- 1 adobo sauce
- 1/2 tsp ground cumin
- 2 cups vegetable broth
- 1/2 cup red lentils
- Chipotle Roasted Sweet Potatoes
- Kosher salt, to taste

Step 1
Preheat oven to 425°F. Toss chopped sweet potato with olive oil and seasonings. Lay out in an even layer on a baking sheet. Roast for 20-25 minutes, or until soft and lightly browned, stirring once halfway through. Set aside.
Heat oil for the stew in a medium saucepan set over medium heat. Add in the shallot and saute until soft, about 3 minutes. Add in the garlic, chipotle chile, & cumin and saute for 30 seconds.
Pour in the broth and stir in the lentils. Bring mixture to a boil; reduce heat to low and simmer for 10 minutes, stirring occasionally.
Stir in the roasted sweet potato. Cook an additional 10 minutes. Season to taste with salt.
Serve hot topped with Greek yogurt and bread, if desired.
