Cream of Turkey & Wild Rice Soup

  • 1 Tbsp olive oil
  • 1 cup sliced mushrooms
  • 3/4 cup chopped celery
  • 3/4 cup chopped carrots
  • 1/4 cup chopped shallots
  • 1/4 cup flour
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 5 cups chicken broth
  • 1 cup quick-cooking or instant wild rice (I use Uncle Bens pack that goes into microwave to cook)
  • 3 cup shredded cooked chicken or turkey
  • 1/2 cup sour cream
  • 2 Tbsp chopped parsley

Preparation time 60mins


Step 1

Heat oil is large pot. Add mushrooms, celery, carrots and shallots. Cook stiring until soft. Add flour and salt/pepper,m stirring for two minutes more. Add broth, bring to boil, scraping up browned bits. Add rice (cooked previously is best), reduce heat to simmer. Cover for 10 minutes. Stir in poultry, sour cream and parsley. Cook til heated thru (approx 10 minutes).
