- Simple Syrup:
- 4 cups water
- 3 1/3 cups sugar
- LIME DRINK RECIPE:
- 3/4 cup simple syrup (from above)
- 6 lime slices
- 8 sprigs fresh mint
- 4 sprigs fresh mint
- 1/4 cup mixed fresh lime juice and lemon juice
- sparkling water, as needed
- fresh wild blueberries (or regular blueberries if you do not have wild)
In a saucepan bring the water and sugar up to a boil. Stir on occasion and cook until the sugar has dissolved.
Cool the mixture down.
Syrup can be stored in the refrigerator for up to two weeks.
In 4 drink size canning jars (or large glasses) put in a piece of lime slice and a couple mint sprigs.
Add 40 ml of the simple syrup and 20 ml of the lemon/lime juice to each glass.
Add ice cubes then add sparkling water to fill each glass to the top.
Garnish each glass with a thin slice of lime and fresh mint.
