Ingredients
- 4 eggs
- 1 1/2 c. packed light brown sugar
- 1 1/2 c. grated carrots (3 lrg)
- 1 1/3 c. vegetable oil
- 2 1/4 c. flour
- 2 1/2 tsp. cinnamon
- 1 1/2 tsp. baking soda

Preparation
Step 1
Beat eggs and sugar until fluffy and slightly thick. Add carrots and oil; blend well, combine flour, cinnamon, baking soda and salt. Stir into egg mixture. Pout into greased 13x9x2" pan. Bake at 350 degrees for 45 min. Cool in pan.
To Frost:
Blend 1 (3 oz) pkg of cream cheese(softened) and 1/4 c. butter or margarine, softened. Gradually add in 2 1/4 c. 10x sugar and 1 tsp grated orange peel.
