Sweet Potato and Bacon Potstickers

Ingredients

  • # Dipping Sauce:
  • # 2 large sweet potatoes
  • # 1 egg + 1 egg white
  • # 1 shallot
  • # 1/2 tsp cinnamon
  • # 1/4 tsp nutmeg
  • # 1 tsp fresh ginger
  • # 1 green onion
  • # 6 slices thick hickory smoked bacon
  • # 1/4 black pepper
  • # 1/2 teaspoon salt
  • # 1 tbsp dark brown sugar
  • # 1 pack wonton wrappers
  • # 1/2 cup cooking oil
  • # 1/4 cup soy sauce
  • # 1 tbsp peanut oil
  • # 1 tsp sesame oil
  • # 1 tsp chili oil
  • # 2 tbsp rice wine vinegar
  • # 2 tsp dark brown sugar
  • # 1 Thai chili

Preparation

Step 1

Place sweet potatoes in a 400 degree oven. Rub a little oil on them and prick them all over with a fork. Cook for 45 minutes to 1 hour. In a frying pan, cook bacon until it is crispy. Slice shallot and green onion and cook for 2 minutes on medium low then remove from pan. Reserve grease in a bowl and clean pan. In a bowl, separate eggs, reserving one egg yolk. Remove potatoes from oven and allow to cool. Mash potatoes in a bowl. Add cinnamon, nutmeg, ginger, crumbled bacon, egg yolk, green onion, shallot, salt and pepper then mix well. Beat egg whites until they form soft peaks. Fold into potato mixture. In the same pan used to fry bacon, add cooking oil and bacon grease. Take one won ton wrapper and dampen with water on L shaped side with finger. Place 1/2 tsp of mixture in middle and fold over to form a triangle, press out air gently. Allow to dry for 2-3 minutes. Follow cooking directions on package. Place triangle pot sticker in pan with grease and brown on each side. Remove from pan. Pour out remaining grease. Clean the pan if needed, add 1 tbsp oil and 2 tbsp water in the frying pan. Cover bottom of pan with pot stickers and cook on medium low until all water has evaporated. Remove and repeat until all pot stickers are done. Keep warm in microwave, uncovered, with door closed. Dipping sauce: In a small bowl, whisk all ingredients until blended. Slice chili thin and add to mixture. Serve pot stickers warm with dipping sauce.



Notes: They also freeze very well. Fold according to directions above. Lay on a cookie sheet and freeze for one hour. Place in a freezer bag and take out as many as you need. They may also be baked for a healthier snack. Spray cookie sheet with cooking spray and cook at 375 degree for 12-15 minutes.
