Ingredients
- 1 t dijon
- 1 t whole grain mustard
- 1 t orange marmalade
- 1 1/4 lbs salmon
- 3/4 c cous cous
- 2 t sliced almonds, toasted
- 1 c chives, fresh
- 1/2 c flat leaf parsley
- 1/4 c fresh mint
- 1 t olive oil
- 2 t lemon juice
- 1 tsp lemon zest
- 1/4 tsp salt
- 1/2 tsp pepper

Step 1
1) preheat oven to 375. in bowl combine, mustards and marmalade. place salmon skin side down in baking dish, spread mix over pieces and bake for 12 minutes.
2) meanwhile in small pot, bring 2/4 c water to boil; remove from heat. stir n cous cous, cover and let stand 5 minutes then fluff with fork. mix in almonds, chives, parsley, mint, oil, lemon juice, lemon zest, salt and pepper
