Spinach Stuffed Tomatoes

Ingredients

  • 1 (10 ounce) bag fresh spinach
  • 4 large tomatoes
  • 3 green onions, chopped
  • 1/2 cup sour cream
  • 3/4 cup Parmesan cheese
  • 2 dashes of cayenne pepper
  • 1 1/2 tablespoons plain dry breadcrumbs
  • 1 tablespoon butter
  • salt and pepper, to taste

Preparation

Step 1

Cut tops of tomatoes, scoop out center, leaving sides firm. Be careful not to puncture sides. Rinse and drain upside down for 15 minutes.

Steam spinach 1-2 minutes, drain excess water in strainer and chop.

Preheat oven to 350°. Cut green onions and sauté in 1 tablespoon butter. Add spinach, sour cream, 1/2 cup Parmesan cheese, cayenne pepper, salt and pepper to taste. Add 1 tablespoon of breadcrumbs. Stuff tomatoes and top with remaining cheese and remaining 1/2 tablespoons breadcrumbs. Bake approximately 20 minutes.
