Easy Scalloped Potatoes

  • 8 small-medium potatoes, thinly sliced
  • 3 tbsp. butter
  • 1 can Campbells ready to eat low sodium cream of mushroom soup (10 oz)
  • 4 slices 1/4 inch thick of Velveeta cheese, cubed
  • 1 sm. onion, diced
  • (optional 1/4 c grated cheddar cheese)

Step 1

Heat oven to 400 degrees. Put all ingredients except potatoes in saucepan. - mix and heat until cheese is melted. Place all sliced potatoes in greased 9x9" casserole dish, layering. Pour the cheese sauce over sliced potatoes. Cover casserole dish loosely with foil and bake for 1 hour, removing the foil for the last 10-15 minutes to brown the cheese (optional - sprinkle 1/4 cup grated cheddar cheese on top for this last 10 minutes of uncovered baking).
