Turkey sausage with white beans and kale

Ingredients
- 1 package turkey sausages
- 1 T olive oil
- 1 c or about 1 small yellow onion chopped
- 1 c carrots chopped (can sub bell pepper)
- 3 cloves garlic minced
- 1 15 oz can Great Northern beans drained
- juice of one lemon divided2 c kale chopped
- salt and pepper to taste

Preparation
Step 1
slice sausage and add to large skillet over med high
cook until browned stirring every few mins
remove sausage from pan put aside
add oil to pan and add carrots and onions sprinkle with salt and pepper and saute till onions translucent-reduce heat to medium and add garlic, beans and half the lemon juice...stir and adjust seasoning to personal taste
return sausage to pan-add kale and remaining lemon juice
stir cover and allow kale to wilt 2 mins-serve hot
