Chickpea Tomato Salad


Delicious, high protein salad. Healthy.

  • 2 cans of garbanzo beans/chick peas, drained
  • 1 can of red kidney beans, drained
  • 6 cloves of garlic, smashed and minced
  • 4 stalks of celery, diced
  • 2 containers of grape or cherry tomatoes, chopped
  • 1 C of chopped cilantro
  • 1 C of chopped parsley
  • juice of two or three lemons
  • 2 T olive oil
  • S and P to taste



Step 1

Mix all of these ingredients in a large bowl and put in fridge for two hours to let the flavor get through the salad.
