Ingredients
- 3 c frozen hash browns, defrosted*
- 2 T canola oil
- 1/8 t salt
- 1/2 c sharp cheddar cheese
- 1/4 c crumbled bacon, browned sausage, or diced ham (optional)
- 2 small sliced mushrooms
- 1 c milk
- 2 eggs
- 1/8 t salt
- 1/8 t pepper
- Parsley flakes, chives, or sliced green onion
- red bell pepper

Preparation
Step 1
Preheat oven to 450 °. Spray 9 inch pie pan thoroughly with cooking spray. In a bowl, stir potatoes and canola oil. Press evenly on bottom and sides of pie pan. Bake for about 15 minutes until just beginning to brown. Remove from oven.
On top of potatoes, layer the cheddar cheese then the meat and mushrooms.
In a bowl, beat together milk, eggs, salt, and pepper. Pour egg mixture over other ingredients in pan. Sprinkle with parsley flames, chives, or sliced green onion. Arrange red pepper on top.
Return to oven and bake at 450° for about 25 minutes or until lightly browned and knife inserted 1 inch from edge comes out clean. Allow to cool 5 minutes before cutting into wedges.
