Black Beans and Rice with Apple Salsa

Delicious and super easy to prepare! Can be served along side chicken or beef, or rolled up into a tortilla for a main entree! The apple salsa has just the right amount of tang to make this a special dish!

Ingredients

  • 1 cup chopped peeled Granny Smith Apple (1 large)
  • 1/2 cup chopped cilantro (divided)
  • 1/3 cup finely chopped red onion (divided)
  • 1 teaspoon (or more) fresh lime juice
  • 1/3 cup finely chopped green bell pepper
  • 2 tablespoons vegetable oil
  • 3 garlic cloves, minced
  • 1 1/2 teaspoons chili powder
  • 1 teaspoon ground coriander
  • 3/4 teaspoon cumin seeds
  • 3 cups chicken broth (or vegetable broth)
  • 2- 15oz cans black beans, rinsed and drained
  • Kosher salt and freshly ground black pepper
  • 2 cups steamed white or brown rice

Step 1

Combine the apple, 1/4 cup cilantro, 2 tablespoons red onion and 1 teaspoon (or more) of the lime juice in a small bowl; toss to coat and set aside.

Combine the remaining red onion, green bell pepper and oil in a large skillet. Cook over medium heat, stirring often, until completely softened, 6-7 minutes. Add the garlic and chili powder, coriander and cumin seeds. Stir constantly for 2 minutes. Stir in the broth and mix, add the black beans. Bring the mixture to a boil, reduce heat to medium and simmer briskly for about 20 minutes, stirring often, until some of the liquid has evaporated and a thick sauce has developed. Turn off the heat and let beans sit for a few minutes to let sauce thicken some more. You do not want to have the beans be too dry, or too liquidy, so keep an eye on them.

Steam rice according to package directions.

To serve: Spoon rice onto plate and serve beans next to and slighly on top of the rice. Add sauce to beans and rice as desired. Then spoon the apple salsa next to the rice and beans! You want a little bit of each flavor in each bite! Or you can serve the ingredients inside of some flour tortillas as a main course!
