Strawberry Cheesecake Mousse

A dessert than can either be made in 8 individual serving dishes or in a single large serving dish.
Ingredients
- For the Crust:
- 3/4 graham crackers crumbs (from about 5 whole graham crackers)
- 2 Tbsp butter. Melted
- 1 tsp sugar
- For the Mousse:
- 1/2 cup heavy whipping cream
- 1/3 to 1/2 cup powdered sugar (dependent on sweetness of strawberries)
- 2 Tbsp powdered sugar
- 1 cup fresh strawberries, pureed to make about 1/2 cup
- 1/2 tsp vanilla
- Fresh strawberries to garnish

Preparation
Step 1
1. Preheat oven to 350.
2. Mix the graham cracker crumbs with the butter and sugar. Press into a small baking dish (such as a pie plate) and cook 8 minutes, or until lightly golden.
3. Remove and set aside to cool.
4. Whip the cream in a bowl until stiff peaks form. Beat in 2 Tbsp of powdered sugar and set aside
5. In a large bowl, beat together the cream cheese and the 1/3 to ½ cup powdered sugar until smooth, then add vanilla.
6. Mix in the strawberry puree until evenly distributed.
7. Gently fold in the whipped cream.
8. To serve, crumble the cooled graham cracker crust crumbs into the bottom of 8 small serving dishes.
9. Top with the mousse and garnish with fresh strawberries.
10. Refrigerate at least 20 minutes or until ready to serve.
