Ingredients
- 1 Chicken breast
- Cajun spice rub
- 2 Tbs water
- Mixed salad leaves
- Dried cranberries
- Plain yogurt
- Sesame seeds
- Lemon Juice
- Garlic

Preparation
Step 1
1. Get your chicken breast and generously mix 2 tbs water with the cajun spice rub and rub it on your chicken all over
2. Put your chicken in tin foil, crack a few pieces of garlic and a splash of lemon juice (optional into the foil with the chicken)
3. Put the chicken in the oven for about 30 mins till the juices run clear, i pulled the foil off about 10 mins before the end to get the cajun spice crisped a little
4. Take your chicken out when done and let to rest for a minute
5. Wash your salad leaves and put in a bowl 6. Add some dried cranberries to the salad leave and drizzle with plain yogurt
7. Slice up your chicken breast and sprinkle with some sesame seeds and add to the salad and serve!
