Mock Potato Salad (cauliflower)

This stuff is really good! And, it's a low carb alternative to potato salad because there's NO potatoes in it.

Ingredients

  • 1 large head cauliflower
  • 6 large eggs, hard-boiled, chopped
  • 1/2 cup celery (about 2 ribs), finely diced
  • 2/3 cup mayonnaise, or as needed
  • 1/2 - 1 teaspoon yellow mustard
  • 1/2 teaspoon salt, or to taste
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic salt
  • Paprika, for garnish
  • Parsley, chopped, for garnish

Preparation

Step 1

Chop the cauliflower into small pieces (should make 4-5 cups). Boil eggs, then chop. Chop celery. Set all aside.

Bring a large pot of water to a boil over high heat.
Add the cauliflower and cook for 6-8 minutes, or just until tender. Drain cauliflower and immediately immerse in an ice water bath to stop the cooking process. Drain cauliflower well in a colander then spread out and pat dry with paper towels.

In a mixing bowl, stir together the mayo, mustard, salt, pepper, and garlic salt until creamy. Stir in the chopped eggs. Fold in celery and cauliflower.

Sprinkle with the paprika, then the parsley. Chill for at least 1 hour before serving.
