Ingredients
- 2 1/2 cups flour
- 2 cups sugar
- 1 tsp baking soda
- 2 tsp cinnamon
- 1/2 tsp salt
- 3 beaten eggs
- 3/4 cup vegetable oil
- 1 cup crushed pineapple
- 1 tsp vanilla
- 2 cups grated carrots
- 1 cup chopped nuts
- Cream Cheese Frosting
- 1 3 oz pkg cream cheese, softened
- 1/2 cup butter
- 4 cups icing sugar
- 1 tsp vanilla
- 2 - 3 Tbsp grated lemon peel
- 3 Tbsp lemon juice

Preparation
Step 1
Preheat oven to 325F. Grease 9 x 13 pan.
Mix all dry ingredients together. Add eggs, oil, pineapple and vanilla to dry ingredients. Add carrots and nuts. Mix well. Pour into prepared pan. Bake for 40 to 45 minutes or until tootpick comes out clean.
When cool, spread with Cream Cheese Frosting.
