Ingredients

  • 2 Tbsp butter
  • 2 Tbsp oil
  • 2 lbs sweet onions sliced into half rings
  • dash salt
  • dash pepper
  • 2 Tbsp flour
  • 3 cans beef consume or stock
  • 3 cans of water
  • 1/2 tsp sage
  • 2 cups grated cheese (swiss or Guyere)
  • 4 thick slices italian or French bread

Preparation

Step 1

Melt butter in dutch oven on medium heat; add slices of onions, salt, pepper, and sage. Lower heat to low and slowly brown onions till they carmaelize and are golden brown (about 1 hour).When carmaelized add the flour into onion mixture till bubbly; then add consume and water stir to blend. Simer partially covered for 15 mins. Toast the bread slices in 325 degree on a cookie sheet for about 4 mins. each side. Pour soup into oven safe bowls; place bread onto soup; place cheese on top of bread. Broil for 2-3 mins till golden brown.
