Chocolate Chip Zucchini Cookies

Ingredients

  • No stick Cooking Spray
  • 1/2 cup butter
  • 1 cup sugar
  • 1 egg, beaten
  • 2 cups all purpose flour
  • 1 teaspoon baking soda
  • 1 easpoon ground cinnamon
  • Pinch ground nutmeg
  • 1/2 teaspoon salt
  • 1 cup zucchini, finely grated
  • 1 1/2 cups semi-sweet chocolate chips
  • 3/4 cup chopped walnuts (optional)

Preparation

Step 1

Preheat oven to 350 degrees.

Spray 2 cookie sheets with cooking spray and set aside.

In a large bowl, using an electric mixer on medium-low speed, cream together butter and sugar until light and fluffy. Add egg, flour, baking soda, cinnamon, nutmeg and salt and mix well. Mixture will be very dry. Stir in zucchini, chocolate chips and walnuts and mix until a wet dough forms.

Drop by teaspoonfuls onth the prepared cookie sheets, leaving a 2" space between cookies. Bake for 10 - 12 minutes or until golden (do not overbake). Remove from oven and let cool for 15 minutes. Remove cookies to wire racks and allow to cool completely before serving.
