Ingredients
- Dressing:
- 2 bunches spinach (washed and torn)
- 1 small head of butter lettuce (or iceberg)
- 3/4 lb shredded mozzarella cheese
- 1 cup cottage cheese
- 1/2 lb bacon, cooked and crumbled
- 3/4 lb sliced mushrooms
- 1 purple onion, thinly sliced (optional)
- 3/4 cup or less oil (canola, EVO)
- 1/4 cup sugar (or alternative)
- 1 tsp dry mustard
- 1 tsp salt
- 3 tsp poppy seeds
- 1/3 cup Red Wine Vinegar

Step 1
Salad:
Toss all salad ingredients together just before serving.
Dressing:
Mix well and refrigerate for a few hours.
When you are ready to serve dress the salad. This one does not keep well overnight.
