Cucumber Kidney Bean Salad

1. In a Large bowl combine beans, garlic, peppers, onions, cucumbers and celery
- 1 15oz. Cans Kidney Beans
- 1 15oz. Can Garbanzo Beans
- 1 Red Bell Pepper
- 1/2 Cup Chopped Onion
- 1 Clove Garlic, Minced
- 1 1/2 Cucumber, Diced small
- 1/2 Cup Celery, chopped
- 1/2 Cup or Less Canola Oil
- 1/4 Cup Apple Cider Vinegar
- 1/2 to 1 tsp Honey
- 1 tsp Tamari (soy sauce)
- 1 Tbsp Dijon Mustard
- 1 tsp Curry Powder
- 1/4 tsp Paprika
- Dash of Cayenne
Mongolian Beef

1. Make the sauce by heating 2 teaspoons of vegetable oil in a medium saucepan over medium/low heat
- 2 teaspoons vegetable oil
- 1/2 teaspoon minced ginger
- 1 tablespoon chopped garlic
- 1/2 cup soy sauce
- 1/2 cup water
- 3/4 cup dark brown sugar
- 1 cup vegetable oil
- 1 pound flank steak
- 1/4 cup cornstarch
- 2 large green onions, sliced into 4-inch pieces
Pork - Honey Ginger Pork Tenderloin

Mix all ingredients together, except for the pork
- 1/4 teaspoon Cinnamon
- 1/8 teaspoon Ground Red Pepper
- 1 tablespoon Minced Garlic
- 1 tablespoon Ketchup (I use "Simply Heinz")
- 1 tablespoon Minced Ginger (I use the squeeze tube variety)
- 1 teaspoon Minced Ginger ((1 Tbsp PLUS 1 tsp total))
- 1/4 cup Oyster Sauce
- 1/4 cup Soy Sauce
- 1/4 cup honey
- 1 tablespoon Brown Sugar (optional)
- 1 pound Pork Tenderloin

- 2 1/2 cups Mary’s Gluten-Free Flour Blend or all-purpose flour blend of choice
- 1 teaspoon xanthan gum
- 1 tablespoon baking powder
- 1/2 teaspoon sea salt
- Coconut Cream Filling
- MAKES 1 1/2 CUPS
- 2 tablespoons cold water
- 1 (1/4-ounce) envelope
- unflavored gelatin
- 1 1/2 cups canned lite coconut milk, divided
- 1/4 cup powdered sugar
- 1/2 teaspoon pure vanilla or coconut extract
- MAKES 2 CUPS
- 3/4 cup canned lite coconut milk
- 1 (12-ounce) package semisweet chocolate chips or chunks
- 1 . Heat coconut milk in a small saucepan and bring to a boil. Pour over chocolate and stir until melted.
