Chicken - French Chicken in a Pot

- 1 whole roasting chicken (4 1/2 to 5 pounds), giblets removed and discarded, wings tucked under back (see note)
- 2 teaspoons kosher salt or 1 teaspoon table salt
- 1/4 teaspoon ground black pepper
- 1 tablespoon olive oil
- 1 small onion , chopped medium (about 1/2 cup)
- 1 small stalk celery , chopped medium (about 1/4 cup)
- 6 medium garlic cloves , peeled and trimmed

- 1 medium sprig fresh rosemary (optional)
- 1/2 - 1 teaspoon juice from 1 lemon

- 1/3 Cup bread crumbs (1 Tbsp + 1 1/4 tsp)
- 2 Tbsp Olive oil (1 1/2 tsp)
- 2 garlic cloves, minced (1 small clove)
- 2 medium onions, diced (1/2 onion or 1 shallot)
- 4 celery ribs, thinly sliced (1 rib)
- 1 1/2 lbs (about 8 cups) finely chopped (NOT minced)
- fresh mushrooms (6 oz. about 2 cups)
- 1/2 tsp dried thyme (1/8 tsp)
- 1/2 tsp paprika (1/8 tsp- 1 DASH)
- dash cayenne pepper (1/2 DASH)
- 2 Tbsp unbleached flour (1 1/2 tsp)
- 3/4 cup milk (3 Tbsp)
- 1/2 tsp salt (1/8 tsp - DASH)

- 1/4 tsp Salt
- 3 Garlic Cloves Minced
- 2 Tbsp Olive Oil
- 1/3 - 1/2 Cup Cooked Wheat Berries (or grain of your choice)
- Dry homemade bread crumbs (optional for crunch)
- Drizzle of Olive Oil to mix with bread crunbs to facilitate toasting
- Salt and Pepper to taste (I am not a fan of super salty food so season at your own discretion)
