1. Adjust oven rack to lower-middle position and heat oven to 300 degrees
- 2 2 medium 2 garlic cloves , minced or pressed through garlic press (about 2 teaspoons)

- 1 1 boneless 4 1 1/2-inch roast (about 4 pounds), trimmed of excess fat, cut into 1 1/2-inch pieces (see note and step by step below)

- 22 Reduce heat to medium-high. Add water, corn and potatoes to Dutch oven; sprinkle remaining 1/2 teaspoon seasoned salt evenly over top. Cover; cook 15 to 20 minutes or until juice of chicken is clear when thickest part is cut to bone (180°F).
- 33 Remove chicken and corn to serving platter, using tongs. Gently stir potatoes with onions and pan juices; spoon onto serving platter. Sprinkle with parsley.
