Pecan-Cinnamon Shortcakes with Bananas and Dulce de Leche

1 Heat oven to 350?F. In medium bowl, mix Bisquick mix, 2 tablespoons sugar, the pecans and cinnamon
- 1 1/4 cups Original Bisquick® mix
- 2 tablespoons sugar
- 1/4 cup finely chopped pecans
- 1/2 teaspoon ground cinnamon
- 1 1/2 cups heavy whipping cream, chilled
- 1/2 teaspoon sugar
- 4 tablespoons dulce de leche (caramelized sweetened condensed milk), from 13.4-oz can
- 2 ripe bananas, cut into 1/4-inch slices
- 4 teaspoons grated chocolate
Monte Cristo Stuffed Chicken Cutlets

Halve chicken breasts through to make 8 cutlets; pound very thin, about 1/4 inch
- 4 boneless, skinless chicken breasts
- Salt and pepper
- 4 tablespoons Dijon mustard, divided
- 2 tablespoons fresh thyme, chopped
- 4 deli-cut slices Swiss cheese
- 4 deli-cut slices mild, imported ham
- Flour, for dredging plus 1 tablespoon
- 3 eggs, beaten
- Juice of 1/2 lemon
- 2 tablespoons canola oil
- 3 tablespoons butter, divided
- 1 1/2 to 2 cups chicken stock
- 2 tablespoons maple syrup or honey
French Apple Cake

1. Adjust oven rack to lower-middle position and heat oven to 325 degrees
- 1 1/2 1 1/2 8 1/8 Granny Smith apples, peeled, cored, cut into 8 wedges, and sliced 1/8 inch thick crosswise
- 1 1 1 tablespoon Calvados
- 1 1 1 teaspoon lemon juice
- 1 1 2 cup (5 ounces) plus 2 tablespoons all-purpose flour

Bake @ 350 for about 40 min, you know when it's done
- 1 pt melted high fat/premium ice cream, Think Haagan or Ben & Jerry's
- 1 white cake mix
- 4 eggs
Tricia’s Potato Soup

*Slow cooker:* Skip cooking the celery and onion in butter
- 2 stalks celery, sliced
- 1 med. onion, chopped (or equiv. frozen chopped onion)
- 2 T margarine, melted
- 6 med potatoes, peeled and cubed (1/2 a 5 lb bag = $1.98. For our family $3.97)
- 2 carrots, sliced
- 3 cups water
- 5 chicken bullion cubes (I use chicken broth pulled from the freezer (free!) or one can chicken broth)
- 3/4 tsp seasoned salt
- 1/2 tsp dried thyme
- 1/2 tsp rosemary
- dash garlic, pepper
- 2 cups milk
- 1 cup shredded cheddar cheese

Easy Chili Rellenos

Spread butter in a slow cooker
- 2 t. butter, softened
- 7-oz. can whole green chiles, drained and cut in strips
- 8-oz. pkg. shredded Cheddar cheese
- 8-oz. pkg. shredded Monterey Jack cheese
- 14-1/2 oz. can stewed tomatoes
- 4 eggs, beaten
- 2 T. all-purpose flour
- 3/4 c. evaporated milk

- 4 boneless, skinless chicken breasts (about 1-1/2 pounds)
