Cranberry Sauce Muffins

1 Heat oven to 400°F. Spray 18 regular-size muffin cups with cooking spray
- 2 cups all-purpose flour
- 1 cup sugar
- 3 teaspoons baking powder
- 1/2 teaspoon salt
- 1 cup milk
- 1/4 cup vegetable oil
- 1/2 teaspoon vanilla
- 1 egg, beaten
- 1 cup leftover cranberry sauce
Chocolate Cream Cheese Cupcakes

Place rack in center of oven and preheat oven to 350 degrees
- 2 milk chocolate bars (1.55 ounces each)
- 1 package (18.5 ounces) plain butter recipe fudge cake mix
- 1 package (8 ounces) cream cheese, at room temperature
- 1/2 cup warm water
- 1/2 cup vegetable oil
- 4 large eggs
- 2 teaspoons pure vanilla extract

Directions In a large bowl, cream butter and sugar until light and fluffy
- FROSTING:
- 1 cup butter, softened
- 1/2 cup sugar
- 1 tablespoon milk

- 2-1/4 cups all-purpose flour
- Red paste food coloring
- Miniature chocolate chips

Baked Meatballs

- 1 cup fat-free milk
- 1/2 cup egg substitute (equal to 2 eggs)

- 1 1tsp (5 mL) salt

- 1/2 tsp (2 mL) ground coriander
- 1/2 tsp (2 mL) cayenne pepper
- 1/2 tsp(2 mL) dried oregano
- 3 lb (1.4 kg) pork back ribs or pork side ribs
- 1/2 cup (125 mL) ketchup
- 2 tblsp (25 mL) cider vinegar
- 1 tbsp (15 mL) maple syrup
- 1 tbsp (15 mL) Worcestershire sauce
- 1 tsp (5 mL) chili powder

- 1 tablespoon unsalted butter, plus more if needed
