Spiced Apple Cupcakes with Salted Caramel Frosting

1 Heat oven to 375°. Place paper baking cup in each of 12 regular-size muffin cups
- Cupcakes:
- 1 1/2cups1 1/2 cups Original Bisquick® mix
- 1/2cup1/2 cup sugar
- 1teaspoon1 teaspoon apple pie spice
- 1/2cup1/2 cup apple cider or juice
- 2tablespoons2 tablespoons butter or shortening, softened
- 1teaspoon1 teaspoon vanilla
- 11 egg
- 1 1/4cups1 1/4 cups chopped peeled apple (about 1 medium)
- Salted Caramel Frosting:
- 3/4cup3/4 cup Rich & Creamy Vanilla frosting (from 1 lb-container)
- 1/4cup1/4 cup caramel topping
- 1/4teaspoon1/4 teaspoon kosher (coarse) salt
Sunday Afternoon Pickles

In a large bowl, combine the vinegar, water, sugar, and salt; mix well
- 1 cup white vinegar
- 1 cup water
- 3/4 cup sugar
- 1 teaspoon salt
- 8 cups peeled and thinly sliced Kirby or other cucumbers (about 3 pounds)
Green Chile Queso with Cheddar Oregano Breadsticks

1 In 2-quart saucepan over medium to low heat, place green chiles and cumin
- 3 cans (4.5 oz each) chopped green chiles
- 1 teaspoon ground cumin
- 1 package (8 oz) cream cheese, cut into 1-inch cubes
- 10 oz white or regular American cheese loaf, cut into cubes
- 1 can refrigerated soft breadsticks
- 1 cup finely shredded sharp Cheddar cheese (4 oz)
- 1 tablespoon dried Mexican or regular oregano leaves
Tuna Macaroni Salad

Mix salad ingredients together, mix dressing ingredients together, and gently fold the dressing into salad
- Dressing:
- 3 cups of macaroni
- 12 ounces of canned tuna
- 3 boiled eggs, chopped
- 2 stalks of celery, chopped
- 10 ounce package of frozen green peas
- 1 onion, chopped
- 1 green pepper, chopped
- 1/3 cup of Italian dressing
- 1 cup mayonnaise
- 1/2 cup sour cream (optional)
- 1/2 teaspoons garlic powder
- 1/2 teaspoon salt
- 1/8 teaspoon black pepper
Corn and Black Bean Chopped Salad

Toss together all ingredients in large bowl until combined
- 3 cups chopped iceberg lettuce
- 2 cans (8-3/4 oz each) whole kernel corn, drained
- 1 can (15 oz each) Whole Black Beans, drained, rinsed
- 1 can (10 oz each) Mexican Diced Tomatoes with Lime Juice & Cilantro, undrained
- 2 tablespoons Canola Oil
Black Pepper Cookies

Adjust rack high in oven. Preheat oven to 400 degrees
- 3 cups sifted all purpose flour
- 2 teaspoons double-acting baking powder
- 1/2 pound butter
- 3/4 teaspoon black pepper -- (preferably freshly ground)
- 1 pinch cayenne pepper -- generous
- 1/2 teaspoon ground clove
- 2 teaspoons cinnamon
- 1 tablespoon ground ginger
- 1 1/2 cups sugar
- 1 egg
Crustless Country Quiche

Preheat oven to 350 degrees
- 1/2 pound ground beef; cooked, crumbled and drained
- 1 cup shredded mozzarella cheese
- 1 cup cottage cheese
- 8 eggs, beaten
- 1/2 cup finely chopped onion
- 1/2 teaspoon salt
CROCKPOT CHICKEN & VEGETABLE ALFREDO LASAGNA

Slice vegetables and dice chicken
- Sauce mixture:
- Noodles & Veggies;
- 1 9-oz box No Boil Lasagna Noodles {I used Barilla Flat Lasagna Noodles}
- 8 oz sliced mushrooms
- 1 zucchini, sliced thin
- 1 yellow squash, sliced thin
- 1 tomato, diced
- Cheese Mixture-
- 1 16-oz container cottage cheese or ricotta cheese
- 1 cup mozzarella, divided in half {half goes on top of the lasagna}
- 1 cup Parmesan cheese, divided in half {half goes on top of the lasagna}
- 1 egg, beaten
- 1 tsp dried parsley
- salt & pepper
- 1 15-oz jar Alfredo sauce {I used Bertolli}
- 1 cup chicken broth
- 1/2 tsp dried sage
- 1 tsp Italian Seasoning
- 2 tsp onion powder {I opted for powder over real onion because I worried the onion wouldn't have enough time in the crockpot to sufficiently cook/ soften and give off flavor.}
- 2 cups diced, cooked chicken {I used 1/2 a rotisserie chicken}
Vinegar Fried Chicken

In a small mixing bowl, combine the onions, garlic, salt, pepper, sugar, and Accent
- FLOUR DREDGING MIX:
- 3 lbs. Chicken pieces (I used thighs)
- 1 medium Onion, sliced thinly
- 8 –10 fresh Garlic cloves, finely minced
- 1 tbsp. Salt
- 1 tbsp. granulated Sugar
- 1 tsp. ground Black pepper
- 1 tsp. Accent
- 1 cup white or apple cider vinegar
- 2 cups All-purpose flour
- 2 tsp. Salt
- 2 tsp. Onion powder
- 1 tsp. Garlic powder
- 1 1/2 tsp. ground Black pepper
- 1 tsp. Accent
Apple Rice Pudding

Put the apples, rice, boiling water, salt, raisins and nutmeg in the rice cooker
- 2 cups apples, peeled, cored, and diced
- 1 cup short-grain white rice (Carolina Gold is recommended)
