- 2 T Red Wine Vinegar
- 1 t Fresh Oregano Chopped
- 1 1/2 # English Cucumbers, Peeled & Sliced
- 1 C Grape Tomatoes, Halved
- 1/2 C Red Onion, Thin Sliced
- 2 T Fresh Mint Leaves
- 2 T Fresh Parsley
- 2 T Fresh Dillweed
- 1/2 C Feta Cheese, Crumbled

Baked Whole Flounder

- 1 to 2 whole flounder
- 2 tablespoons butter, melted
- 1 tablespoon paprika
- 1 ounce dry white wine
- 3 to 4 thin slices onion
- 3 to 4 thin slices lemon
- Sea salt & fresh pepper
- Fresh parsley chopped for garnish
Sausage Stuffed French Bread

- 1/2 1/2 1/2 # Ground Italian Sausage Cooked & Drained
- 1/4 1/4 1/4 C Diced Onion
- 1/4 1/4 1/4 C Diced Celery
- 1 1 1 T Minced Garlic
- to & Pepper to Taste
- Butter & EVOO
- Roasted Red Pepper Dressing
- 1/2 1/2 1/2 C Shredded Mozzarella Cheese
Bobby Flay Crab Cakes

Everybody loves crab cakes, and they're the perfect party appetizer or meal-just shape them whatever size you want
- 1 pound jumbo lump crabmeat
- 1 medium yellow onion, chopped fine
- 4 cloves garlic, minced
- 1/2 to 3/4 cup bread crumbs
- 1/2 lime juice
- 1/4 cup fresh parsley
- 2 tablespoons extra virgin olive oil
- 3 tablespoons extra virgin olive oil
Roasted Shrimp Salad

Preheat Oven to 400F. Medium Bowl Mix Shrimp, EVOO, Salt & Pepper to Coat
- Dressing:
- 1 # Shrimp Cleaned & Peeled
- 1 Bag Spring Mix Greens
- 1/4 C EVOO
- 1 Orange Zest
- 1/2 C Red Onion Diced
- 1/4 C Fresh Dill Minced
- Sea Salt & Pepper to Taste
- Romano Cheese Grated
- 1/2-1 C Mayonnaise
- 1 Orange Juiced
- 1 T Orange Zest
- 1 T White Wine Vinegar
- Optional:
- Walnuts or Pine Nuts

Medium Bowl Combine All Ingredients, Mix Well
- 1 Seedles Cucumber, Skin Stripped Lengthwise 4-5 Times & Sliced Thin (use a mandoline)
- 3-4 Green Onions Sliced Thin
- 1-2 C Rice Vinegar, Enough to Cover
- Pinch of Red Pepper Flakes (1/8t)
- Pinch of Salt to Taste (1t)
Moroccan Beef Stew

- 1 1/4 # Ground Chuck 80-85%
- Salt & Pepper
- 2 T EVOO
- 1 Onion Chopped
- 1 Carrot Chopped
- 1 Red Pepper Chopped
- 1 Russet Potato Cubed Bite Size
- 2 C Beef Stock
- 1/2 C Green Olives Halved
- 1/2 C Raisins
- 15 oz Can Hunts Diced Tomatoes
- 15 oz Goya Chick Peas Drained & Washed
- 2 Cloves Garlic Minced
- 1 t Paprika
- 1 t Cumin
- 1 T Cinnamon
- 1 T Fresh Cilantro Minced
- 1 T Lemon Zest
Marinated Vidalias

- 2 Medium Vidalia Onions
- 1/2 C Sugar
- 1 C Water
- 1/4 C Rice Vinegar
- 1 1/2 T Mayonnaise
- 1 t Celery Seeds
