Ingredients
- Dressing:
- 1 # Shrimp Cleaned & Peeled
- 1 Bag Spring Mix Greens
- 1/4 C EVOO
- 1 Orange Zest
- 1/2 C Red Onion Diced
- 1/4 C Fresh Dill Minced
- Sea Salt & Pepper to Taste
- Romano Cheese Grated
- 1/2-1 C Mayonnaise
- 1 Orange Juiced
- 1 T Orange Zest
- 1 T White Wine Vinegar
- Optional:
- Walnuts or Pine Nuts

Preparation
Step 1
Preheat Oven to 400F.
Medium Bowl Mix Shrimp, EVOO, Salt & Pepper to Coat. Spread One Layer on Baking Sheet with Wire Rack & Roast 3 Minutes, Turn for 3 More. Switch Oven to Lo-Broil, Heat 3-4 Minutes until Pink & Firm. Remove & Allow to Cool.
Medium Bowl, Whisk Dressing (only enough mayo to be creamy), Add Salt & Pepper to Taste.
Place Greens in Large Salad Bowl, or Individual Servings, Add Onion, Dill, & Shrimp - Toss.
Add Dressing, Cheese & Nuts.
Serve Room Temperature or Chill.
