Large Sauce Pan, Add EVOO,Onion & Garlic, Saute 3-5 Minutes
- 1-1 1/2 # Ground Chuck, Cooked & Drained
- EVOO
- 1 Onion Sliced Thin
- 1 Clove Garlic Minced
- 1 Yellow Pepper Sliced & Cut in Half
- 1 Red Pepper Sliced & Cut in Half
- 3/4 C Carrots Diced
- 3/4 C Raisins (Soak in Water 20 Minutes)
- 1/2 C Dry White Wine
- 1/4 C Green Olives Sliced, Drained
- 1 T Balsamic Vinegar
- 1 Bay Leaf
- 8oz Can Stewed Tomatoes, Undrained
- 4oz Can Tomato Sauce
- Salt & Pepper to Taste

Garlic Pork Tenderloin

Small Bowl Whisk All Ingredients Together
- 2-3 # Pork Tenderloin
- 3 T EVOO
- 2 t Fresh Rosemary Chopped
- 1/4 t Pepper
- 1 T White Wine Vinegar
- 2 Garlic Cloves Minced
Sunset Salad '21' Club

In a large bowl combine all ingredients and toss to coat salad with dressing
- 2 cups finely shredded greed cabbage (from about 1/2 medium head)
- 2 cups finely shredded iceberg lettuce (from about 1/2 head)
- 1 1/2 cups 1/2 inch cubes smoked beef tongue (about 3/4 pound)
- 2 cups 1/2 inch cubes poached chicken breast (about 1 pound)
- 3/4 cup Lorenzo dressing
- 2 tablespoons red-wine vinegar
- 1/2 teaspoon dry mustard dissolved in t tablespoon water
- 1/4 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 1/3 cup olive oil
- 2 tablespoons bottled chili sauce
- 2 tablespoons finely chopped watercress leaves
- 2 tablespoons chopped cooked bacon (about 3 slices)
Scallops Sauteed in Lime Ginger Butter

Large Skillet High Heat With EVOO & Butter, Add Scallops, Stir Until Golden, About 2 Minutes
- 1 # Bay Scallops Washed & Dried
- 1 T EVOO
- 1 T Butter
- 3 T Fresh Lime Juice
- 4 T Lime Ginger Butter (recipe follows), Chilled
- Fresh Parsley for Garnish
- LIME GINGER BUTTER
- 1/2 Stick Butter Room Temp.
- 2 t Lime Zest
- 1 t Ground Ginger
- 1/2 t Salt
- Fresh Pepper
- Small Bowl Mix All Lime Ginger Butter Ingredients Until Smooth. Shape Into 21/2" Cylinder Wrap in Foil.
- Refrigerate Until Firm, About One Hour.

- 3 T Worcestershire
- 4 Cloves Garlic Crushed
- 3/4 C EVOO
- Salt to Taste
- 2 # Flank Steak Dried & Tenderized with Fork

- 1/4 - 1/2 C Sharp Cheddar Shredded
- Heavy Cream
- Tarragon Leaves
Slow Cooker Chicken & Dumplings with Frozen Dumplings

- 3 to 4 chicken breasts, washed and dried
- 1/2 cup carrots, diced
- 1/2 cup celery, diced
- 2 tablespoons butter
- 1 (10-ounce) can cream of chicken soup
- 1 (10-ounce) can cream of celery soup
- 2 (10-ounce) cans chicken stock, total of 20 ounces
- 1 tablespoon oregano
- Salt and pepper, to taste
- 1 box Annies Thin Flat Dumplings, found in frozen food section
