- 3 tbs cognac
- 1 cup packed light brown sugar
- 1/4 cup orange juice
- 1 tsp ground allspice
- 2 -3 whole cloves
- 4 -6 whole black peppercorns
- 1/2 red pepper flakes
- 1/2 stick cinnamon
- Dough:
- 2 sticks unsalted butter, softened, plus more for pan
- 2 cups flour, plus more for pan

- 7 tbs unsalted butter, melted plus more for greasing
- 1 3/4 cups cake flour (or all-purpose), plus more for dusting
- 1 1/2 tsp baking powder
- 1/4 tsp salt
- 3/4 c evoo
- 3 tbs 2% milk, room temp
- 4 eggs, room temp
- 1 c sugar
- finely grated zest of 2 lemons
Cinnamon-Streusel Coffee Cake

- 1 c packed light brown sugar
- 1 1/4 c tsp cinnamon

- 1 1/2 sticks cold butter, cut into small pcs
- 1 1/2 c coarsley chopped toasted pecans
- Cake:
- 1 stick butter, room temp, plus more for pan
- 2 c a-p flour
- 1 1/4 tsp baking powder
- 1/2 tsp baking soda

The Best Tomato Basil Soup

- 3 pounds fresh tomatoes, cut in half lengthwise, and quartered
- 1/4 cup plus 2 tbs EVOO
- 1 tbs coarse salt
- 1 1/2 tsp coarse black pepper
- 2 cups chopped yellow and red onions
- 6 garlic cloves, minced
- 2 tbs unsalted butter
- 1/4 tsp crushed red pepper flakes
- 1 28 oz canned plum/whole tomatoes, and their juice
- 4 cups fresh basil leaves or 1 whole tube basil paste
- 1 tsp fresh thyme leaves
- 1 qt chicken or beef stock /white wine
- 2 slices day old bread cut into 9ths (small cubes)
Delicious Corn Pudding

- 2 c canned cream-style corn
- 2 c corn
- 2 tbs unsalted butter, melted
- 3 tbs dark brown sugar
- 3 tbs cornstarch, mixed with 2 tbs bourbon
- 1/2 tsp nutmeg
- 1/4 tsp salt
- 1/8 tsp white pepper
