Chestnut Potato Soup

This is a nice soup for a cold evening as a first course or add a nice loaf of french bread
- 3 tbs evoo
- 2 vidalia onions, chopped
- 3 garlic cloves, minced
- 4 c chicken broth
- 14 to 15 oz chestnuts
- 1 1/2 lb yukon potatoes, peeled and thinly sliced
- 1 tbs thyme leaves, chopped
- cinnamon
- salt and black pepper
- 3 tbs cream sherry
- 1 tsp fresh lemon juice
Irish Scones

- 1 stick frozen grated butter
- 1/2 cup milk
- 1/2 sour cream
- 2 cups all purpose flour
- 1/2 tsp baking soda
- 2 tsp baking powder

Asian Bok Choy Slaw

This recipe goes with pork tacos
- Dressing:
- 2-3 cups Baby bok choy, thinly sliced, including the green tops
- 1/4 c carrots, grated
- 1/4 c red radishes, sliced thin
- 2 tbs cilantro, chopped, if not fresh, dried is okay
- 3-4 green onions, sliced thin and use the green too
- 1 jalapeno, seeded and sliced thin
- 1 tbs toasted sesame seeds
- 4 tbs seasoned rice vinegar
- 2 tbs mayo
- 1 tbs sugar (stevia okay)
- 1 tsp coarse salt
- 1/2 tsp white pepper
Lime Squares with a Coconut Twist

- 6 tbs cold unsalted butter, cut into dice pieces, plus more for pan-softened
- 3/4 cup all-purpose flour
- 3 tbs light brown sugar
- Heaping 1/4 tsp coarse salt
- 1/2 cup shredded unsweetened coconut
- 3 ozs. white chocolate, coarsely chopped (1/2 cup)
- 3 eggs, room temp
- 2/3 sugar
- 3 tbs all-purpose flour

Minestrone Soup

This is a simple recipe for minestrone to make for family night
- 4 cans (14.5-15.5 oz each) cannellini beans, rinsed and drained
- 1 tbs evoo, plus more for drizzling
- 1/2 c yellow onion, finely chopped
- 1/2 c baby carrots, finely chopped
- 1/2 c celery, finely chopped
- 1 clove garlic, minced
- 8 c chicken broth
- 1 long sprig rosemary
- 1 c yukon gold potatoes, diced
- 2 to 3 small zucchini, diced
- 1 large tomato, diced

- 1 tbsp plus 1 cup sugar
- 3 tbs breadcrumbs, unseasoned
- 2 8 oz pkgs cream cheese, room temp and cubed
- 2 eggs
- 2 tbs matzo meal (salt free)
- 1 tbsp lemon juice
- 2 1/2 tsp lemon zest
