- 3/4 cup sugar
- 1/2 cup unsalted butter (room temp)
- 4 eggs
- 2 11 oz cans mandarin oranges (drained well)
- 1 15 oz can crushed pineapple (drained well)
- 1 cup fresh cranberries
- 6 slices bread cubed- I use white, whole wheat or italian bread and leave the crusts on.
Cream Cheese Pie Crust

- 12 tbs unsalted butter, cold, pieces
- 2 c plus 3 tbs pastry flour or 1 1/2 flour and 3/4 c cake flour
- 1/4 tsp salt
- 1/4 tsp baking powder
- 4 1/2 oz cream cheese, cold and pieces
- 3 tbs heavy whipping cream, cold
- 1 tbs cider vinegar
Yeasted Chocolate Coffee Cake

- For Cake:
- 2 1/4 tsp (1 1/4 oz envelope) active dry yeast
- 1/4 c + 2 tbs + pinch of sugar
- 3/4 c warm milk (110 degrees)
- 1 egg, plus 1 egg yolk
- 3 c a-p flour, plus more for surface
- coarse salt
- 1 stick butter, room temp, more for bowl, pan & Parchment
- 1 egg, lightly beaten w/ 1 tbs heavy cream, for egg wash
- For filling:
- 8 oz bittersweet chocolate, coarsely chopped (1 1/4c)
- 1/2 c sugar
- 2 tsp cinnamon
- 4 tbs butter, room temp, cut into small pcs
- Crumb Topping:
- 1/4 c , plus 2 tbs confectioners' sugar
- 1/4 c a-p flour
- 3 tbs butter, room temp
Chicken in Vinegar Sauce

- 1 tbs evoo
- 4 garlic cloves (i'll try minced)
- 4 boneless chicken breasts
- salt and pepper
- 1/2 c rice vinegar
- 2 med tomatoes, cut into 1/2 inch dice
- 2 tbs chopped flat-leaf parsley
Wild Mushroom Cacciatore

This dish is inspired from Rachael Ray
- 1/2 qt chicken stock
- 2 ozs. fresh cremini mushrooms
- 1/4 cup olive oil
- 1 large package baby portabella mushrooms, cut into bite-sized pieces
- 1 medium sweet onion, chopped
- 2 banana peppers
- 2 small celery ribs, cut into small diced pieces
- 4 cloves, minced
- 1 bay leaf
- 1 tsp crushed red pepper flakes
- salt and pepper
- 1 can tomato paste (about 5 ozs.)
- 1 cup dry white wine
- 1 tsp oregano
- 1 sprig fresh rosemary, finely chopped
- 1 15 oz can diced tomatoes
- 1 pound rigatoni or penne
- 2 tbs unsalted butter
- 1 cup grated parmesan cheese, plus extra for table

No-Bake Cherry Cheesecake

- Filling:
- vegetable oil spray for pan
- 1 1/3 c finely ground vanilla wafers or shortbread cookies
- 2 tbs unsalted butter, melted
- 2 tbs sugar
- 1/8 tsp ground cinnamon
- salt
- 1 c sour cream, room temp
- 2/3 c sugar
- 4 oz mascarpone, room temp
- 4 oz cream cheese, room temp
- 2 oz fresh goat cheese, room temp
- 1 vanilla bean, split seeds for scraped, pod reserved for another use (or 3/4 tsp vanilla extract)
- 1/4 tsp lemon zest, finely grated
- 1 c heavy cream
- Topping:
- 1 lb sweet cherries, halved and pitted (3 c)
- 1/3 c sugar
- 2 tsp balsamic vinegar
- 1/2 cinnamon stick
- 1 tbs cornstarch
- 1 tbs water

- 1/2 diced celery
- 3 -4 tbs yellow onion, diced
- 1/4 -1/2 c mayonnaise
- 2 tsp lemon juice
- sea salt
- coarse black pepper
- 2-3 tsp sweet pepper relish
- Dash cajun or creole seasoning
Sweet Potato Crumble

- 2 tbs melted butter

- 1/4 c brown sugar
- 2 tsp cinnamon
- 1/4 c chopped pecans
- Filling:
- 1/4 c chix stock
- 3 lbs sweet potatoes peeled & cut into 1/2" rounds
- 2 scallions chopped

- 1/2 c mayo
- 2 tsp fresh chives, chopped
- 2 tsp fresh parsley, chopped
- 2 tsp fresh lemon juice 1 garlic clove, minced
- 1/4 c red bell pepper,finely chopped
- 1 tbs fresh chives, chopped
- 1 tbs fresh parsley, chopped 3 tbs mayo
- 2 tsp dijon mustard
